Nc'nean Quiet Rebels – Simon's whisky is right up his alley, and he's one of the longest-serving members of the organic distillery's team. Simon developed his personal edition in collaboration with the legendary Scottish brewery Innis & Gunn. Initially matured in STR Red Wine Casks (STR = "scraped" or "shaved", "toasted", "recharred"), the full-bodied single malt was then finished in stout casks – which had previously held Nc'nean whisky.

The limited Quiet Rebels series puts the spotlight on one of Nc'nean's quietly rebellious team members each year, who are known for forging their own path in the world of whisky.
